An Italian southern pork bolognaise sauce. Pork mince which is slowly braised in red wine, tomatoes, fresh marjoram and thyme. Seasoned with sherry vinegar for a little acidity. All you need to do is cook the dried semolina tubular pasta and add a generous sprinkling of grated parmesan.
